Truffle omelette

In the Lot, the Quercy black truffle, the famous Tuber melanosporum, a veritable “black diamond”, is one of the gastronomic jewels of the South-West. From mid-December to the end of February, its powerful, musky and delicately woody aromas enliven the markets of Lalbenque and Limogne-en-Quercy, and sometimes Capdenac-Le-Haut, depending on what producers bring in. This simple, refined omelette reveals all the aromatic richness of this exceptional mushroom, born of the limestone soils of the Causses du Quercy and local truffle-growing expertise.

Ingredients

Serves 4

  • 12 eggs
  • 1 large Quercy black truffle
  • 20 g local farm butter
  • Fine salt
  • Freshly ground pepper
Omelette

Preparation

  1. Prepare the truffle Grate about a quarter of the truffle and cut the rest into thin strips.
  2. Flavour the eggs Break the eggs into a cul-de-poule. Season lightly with salt and pepper, then add the grated truffle. Mix, cover and leave to infuse for at least half a day (the longer you wait, the more intense the flavour).
  3. Cooking the omelette Gently melt the butter in a frying pan. Pour in the eggs and cook slowly to preserve the soft texture and aromas.
  4. Finishing Just before serving, place the slices of truffle on the omelette: they will instantly release all their flavour. Enjoy!
Gourmet tips

  • A little tip : before cooking, put your whole eggs in a jar with a truffle for two days: they’ll soak up the fragrance. Add rice, which also absorbs the aromas wonderfully, for a double pleasure when eating!
  • Gentle cooking: cook the omelette over a very low heat, as truffles do not tolerate high temperatures and risk losing all their subtlety.
  • To be eaten quickly: a fresh truffle reveals its full flavour in just a few days.
  • Serve the omelette with farmhouse bread or a seasonal salad from the producers of Grand-Figeac.
Preparation time

Allow about twenty minutes to prepare your truffle omelette, leave to infuse for half a day, then cook. Serve immediately, piping hot… and enjoy the magic of fresh truffles.
