Mouse of lamb

Noble and tasty, this typical Quercy meat is an emblematic dish for your Easter meal or to delight your taste buds during a family moment!


For 2 people

  • 2 mice of Quercy farm lamb *
  • Olive oil
  • Honey
  • Romarin
  • Thyme
  • 10 cloves of garlic
  • Salt
  • Pepper

The lamb mouse


  1. Marinate the mice for 1 1/2 hours with a mixture of olive oil and honey (honey more or less according to your taste),
  2. Then coat the mice with a brush and add the thinned out thyme.
  3. Heat the oven to 160°c
  4. Remove the thyme from the mice and brown them in an ovenproof casserole dish, add the rest of the marinade with the thyme, water, garlic cloves, rosemary sprigs, salt and pepper.
  5. Cook for 1 hour at 160°c and 3 hours at 120°c. Check regularly and add water if necessary.

Our advice

  1. Sautéed potatoes
  2. Snap peas
  3. And halved tomatoes with breadcrumbs, a little mustard and parsley and baked for 20 minutes.
