KOS Brewery, Mas du Verdier

In the heart of the Causses du Quercy, on the edge of the typical paths of the GR65, is the brasserie KOS, Mas du Verdier, an authentic place where beers with a unique taste are made. Stop by for a few moments to meet Céline and Aurélien, two passionate enthusiasts who will share their love of beer with you.

After several years in different jobs, Celine and Aurélien felt like having a common project of their own. Together, they wanted to create a business that resembled them. Passionate about pastry, Aurélien explains, “In beer, as in making a cake, you need rigor and to like sharing. The notion of quality process is also essential, I acquired it with my experience in the aeronautics industry and then adapted it to the brewery.” The location was quickly found, a restored family barn, surrounded by incredible wilderness. Creating, they both love it, so the ideas flowed and quickly the brewery KOS, Mas du Verdier was born!

organic and local

One of the strong values at KOS is the notion of proximity. The Bio, “it was an obvious choice, we wanted to offer beers in line with our values, our state of mind.” All raw materials are rigorously selected. The malted cereals come from the Occitane maltings. The raw cereals, on the other hand, are produced at a neighboring organic farmer. “Once the beer is produced, we give him back our waste, which is used to feed his pigs. We have an approach that aims to save resources.” The hops, less easy to find in France, are from Europe but Aurélien and Céline are looking to find closer. For special recipes, the melon comes from theCélé valley, the safran is grown at home… “We are in a continuous improvement process, we question ourselves often to have the most authentic tastes possible.” There you have the recipe for success: good local products, two creative minds and a rigor in the quality! Makes you want to taste, right? 400 hectoliters of beer are going to be produced this year, there is definitely one for you!

Your favorite moment:The finality of our work, when we see someone with one of our beers at a bar, that they enjoy tasting it, the bet is won!
Your best memory:The day we came up with our brand name! The development of the brand was a really strong moment, everything was in turmoil, it was the starting point of the project: here we go! Kos is the relationship to the land, our region.
What you like best about the Lot:The nature, the variety of landscapes, this “quiet” side that there is here. It is sometimes forgotten but it is really precious!”

Dynamics on the territory

If you’re a resident or just passing through, you’re bound to come across a KOS bottle! Céline and Aurélien love to promote the city of Cajarc. Present in many local events (La BD prend l’air, Africajarc, Rock n’Lot), they also work with the Cajarc brewery Dune. On the sports side, you’ll see the bottles on various events: mountain bike races, Randos, running, trails. Events are their new focus, with the development of beer kegs. Tourism professionals are other important partners: La Grange du Héron, Lot & Bike, Expert Sport Nature, the Délices de Sophie, many gîtes and soon some restaurateurs value KOS, Mas du Verdier’s beer. You will have understood, Céline and Aurélien like to create links with local actors, the human is essential in the success of their project.
