Portrait of Galiot De Génouillac

A little riddle...

My first is the opposite of small; my second is a row of shrubs bordering a field; my third is used for eating soup; my whole is a title held by Galiot de Genouillac between 1525 and 1546, which made him one of the most important lords in France.
